Domesticar la globalización: alimentación y cultura en la urbanización de una zona rural en México

This article presents a number of elements to analyse the impact of globalisation on daily life by studying eating habits in a rural town undergoing urbanisation. The food, ideas and consumption practices of this population help to understand how the food culture of a human group is constructed in the interrelation of macro- and micro-social factors. We call this process domesticating globalisation, that is, the way in which new foods, as well as the information about them, are managed, incorporated and adapted to daily life in the context of progress and development.
