Abstract
⺠Multiscale models are a hierarchy of models operating at different spatial scales. ⺠They allow to predict macroscale behaviour of the food from microscale features. ⺠They allow to evaluate effects at the macroscale on microscale processes in foods. ⺠Detailed geometric modelling of the 3-D multiscale geometry of the food is required. ⺠They may serve as a tool for structural engineering of foods.
