Abstract
⺠Methods used to enhance the barrier properties of protein films are reviewed. ⺠Methods discussed: plasticization, pH alteration, lipid addition, cross-linking. ⺠Cross-linking methods reviewed: heat induced, chemical, enzymatic, irradiation. ⺠The challenges and potential applications of protein films are discussed.
