Abstract
► This work aims to obtain an engineering understanding of oral processes. ► Tribology equipment has been modified to study lubrication during a dynamic process. ► Gel samples are structured under shear to produce gel particulate systems. ► Patterns of lubrication are affected by gel composition and can be differentiated. ► Lubrication behaviour during this process provides different information to rheology alone.
