Abstract
⺠This work aims to obtain an engineering understanding of oral processes. ⺠Tribology equipment has been modified to study lubrication during a dynamic process. ⺠Gel samples are structured under shear to produce gel particulate systems. ⺠Patterns of lubrication are affected by gel composition and can be differentiated. ⺠Lubrication behaviour during this process provides different information to rheology alone.
