Abstract
⺠Creep tests of wheat kernels were studied with the generalized Kelvin-Voigt model. ⺠Creep behavior of HMW- and LMW-GS in intact wheat kernels was addressed. ⺠Compliance and viscosity were associated with quality and rheological properties of wheat. ⺠HMW- and LMW-GS are predominant factors that affected the creep constants.
