Abstract
► Creep tests of wheat kernels were studied with the generalized Kelvin-Voigt model. ► Creep behavior of HMW- and LMW-GS in intact wheat kernels was addressed. ► Compliance and viscosity were associated with quality and rheological properties of wheat. ► HMW- and LMW-GS are predominant factors that affected the creep constants.
