Abstract
► We monitor the heat stability profiles of LPO in milk from three species. ► The kinetic parameters were estimated using a global fit approach. ► The heat stability increased in the following order: sheep milk < goat milk < cow milk. ► LPO can be used as marker to evaluate the efficiency of certain heating process.
