Abstract
► Temperature variations of chilled, packaged and palletised cod fillets were studied. ► Combined experimental and numerical study was conducted. ► Pallet stack sizes of 4 and 12 box levels were compared. ► Mean temperature rise was predicted to be 1.0 °C lower for the larger stack. ► Overall mean absolute error in the numerical model was 0.3 °C.
