Abstract
► Lipid droplets of filmogenic dispersions and films is a function of the energy input. ► Lipid droplets in filmogenic dispersions and films showed a similar trend. ► The microfluidizer promoted mechanical extensibility and transparency of the films. ► The WVP of emulsified films decreased with increasing pressure or cycle. ► Gelatin-olive oil emulsified films exhibited excellent barrier ability to UV light.
