Abstract
⺠Lipid droplets of filmogenic dispersions and films is a function of the energy input. ⺠Lipid droplets in filmogenic dispersions and films showed a similar trend. ⺠The microfluidizer promoted mechanical extensibility and transparency of the films. ⺠The WVP of emulsified films decreased with increasing pressure or cycle. ⺠Gelatin-olive oil emulsified films exhibited excellent barrier ability to UV light.
