Abstract
⺠Engineering MAP design considers product amount and packaging-permeability. ⺠Mushrooms have high respiration rate, thereby creating EMAP quickly. ⺠Equilibrium gas composition achieved was 3.6% O2 and 11.5% CO2. ⺠Cellophane⢠film had water vapour permeability adequate for mushrooms. ⺠Optimised MAP design was obtained using 2 perforations for 110 g of sliced mushrooms.
