Abstract
⺠Novel textures can be created through controlled lipid droplet-polymer interactions. ⺠Bridging flocculation occurs at pH 6.5 (negative droplets:positive polymers). ⺠Depletion flocculation occurs at pH 3 (positive droplets:positive polymers).
