Abstract
⺠We extracted and modified pinhão starch by acid hydrolysis. ⺠We used the modified pinhão starch as encapsulating agent. ⺠Moisture adsorption isotherms were determined using the gravimetric method. ⺠The differential enthalpy and entropy of sorption were calculated. ⺠The enthalpy-entropy compensation theory was applied.
