Abstract
► We extracted and modified pinhão starch by acid hydrolysis. ► We used the modified pinhão starch as encapsulating agent. ► Moisture adsorption isotherms were determined using the gravimetric method. ► The differential enthalpy and entropy of sorption were calculated. ► The enthalpy-entropy compensation theory was applied.
