Abstract
► Coating at various conditions did not affect the head rice yield of coated rice. ► Most kernels of coated rice were fissured at inappropriate coating conditions. ► Coating under studied conditions provided the uniform color of coated rice. ► Texture of cooked coated rice was not different from cooked white rice. ► Total antioxidant capacity of cooked coated rice slightly decreased.
