Abstract
⺠Coating at various conditions did not affect the head rice yield of coated rice. ⺠Most kernels of coated rice were fissured at inappropriate coating conditions. ⺠Coating under studied conditions provided the uniform color of coated rice. ⺠Texture of cooked coated rice was not different from cooked white rice. ⺠Total antioxidant capacity of cooked coated rice slightly decreased.
