Abstract
⺠We determine dynamic density of dough via application of digital imaging method. ⺠Dough density profiles are affected by proofing time and oven conditions. ⺠Temperature has more significant effect on density changes as compared with RH. ⺠The developed method has the advantage of applying in actual proofing conditions.
