Abstract
⺠Soy protein isolate/agar blend films were prepared by solution casting and thermo-molding methods. Hydrogen bonding interactions existed between soy protein and agar. The casting films possessed more homogeneous interfaces leading to the superior mechanical properties. The tensile strength of the casting soy protein films was enhanced with the incorporation of agar.
