Abstract
► Intact olives collected in two different years were analyzed by NIR spectroscopy. ► Accurate prediction models were obtained for oil and moisture contents. ► Good calibrations were obtained for some interesting physical parameters. ► Predictive models were not transferable from 1 year to the next. ► Quality control in olive industry and breeding programs could be improved by NIRS.
