Abstract
⺠The physical properties of extruded corn grits/fibre by CO2 injection were studied. ⺠Melt temperature could significantly affected physical properties in CO2 injection. ⺠CO2 injection led to better physical properties at lower melt temperature. ⺠CO2 inject did not result in significant changes at high melt temperature. ⺠Corn fibre decreased expansion index, bulk density and breaking strength.
