Abstract
► Industrial debittering was carried out on a polymeric resin Lewatit VPOC 1064. ► The process affected the nutritional quality of the debittered juices. ► The debittering process reduced the vitamin C and bioactive flavonoids levels. ► Debittering did not affect the provitamin A carotenoid level. ► The antioxidant activity was reduced by the debittering process.
