Abstract
⺠Industrial debittering was carried out on a polymeric resin Lewatit VPOC 1064. ⺠The process affected the nutritional quality of the debittered juices. ⺠The debittering process reduced the vitamin C and bioactive flavonoids levels. ⺠Debittering did not affect the provitamin A carotenoid level. ⺠The antioxidant activity was reduced by the debittering process.
