Abstract
⺠Quality attributes of packed and chilled stored meagre fillets were assessed. ⺠Shelf-life of air and vacuum packed fillets was determined experimentally. ⺠Predictive microbiology models were used to study MAP fillets' shelf-life. ⺠Compared to air/vacuum, increased shelf-life of MAP fillets was predicted.
