Abstract
► Quality attributes of packed and chilled stored meagre fillets were assessed. ► Shelf-life of air and vacuum packed fillets was determined experimentally. ► Predictive microbiology models were used to study MAP fillets' shelf-life. ► Compared to air/vacuum, increased shelf-life of MAP fillets was predicted.
