Abstract
⺠Microencapsulation of jaboticaba extracts by spray dryer was studied. ⺠The use of three different carrier agents and temperatures were simultaneously optimized. ⺠The desirability function was successful in optimization of pigments production. ⺠30% Maltodextrin at 180 °C was suggested as a condition of simultaneous optimization. ⺠The use of 30% Maltodextrin at 180 °C allowed high anthocyanin retention.
