Abstract
⺠Dielectric properties of Vidalia onions were measured in a frequency range from 200 MHz to 20 GHz. ⺠Select frequencies were examined for correlations between dielectric properties and moisture%. ⺠A previously reported density-independent function was applied to the dielectric properties. ⺠Models for prediction of moisture content were developed using said density-independent function.
