Abstract
► Barley bran protein is an edible film source. ► The optimal conditions for a composite film are 3% BBP, 3% gelatin, and 1% sorbitol. ► The composite film containing 1% GSE has an antibacterial and antioxidant activity. ► The film is used as a packaging of salmon.
