Abstract
⺠Coating jujube with chitosan combining nano-silicon dioxide was investigated. ⺠Physiological indexes in relation to shelf life were improved. ⺠Related defense enzymes including SOD/POD/CAT exhibited higher activities. ⺠MDA increase of jujube coated with compound film was restrained. ⺠No difference was observed in terms of vitamin C and total polyphenol content.
