Abstract
⺠The research aims to assess the water content in extra virgin olive oils (EVOO) by TDR. ⺠EVOO samples ranging from 714 to 2800 mg of water/kg of oil were considered. ⺠Predictive methods were built by using PLS regression analysis of reflectometric signals. ⺠R2 values up to 0.984 were obtained.
