Abstract
⺠Experimental mass transfer data obtained by magnetic resonance imaging (MRI) is modeled in a double-layer system. ⺠Diffusion coefficients of both chocolate and almond product are estimated. ⺠The partition coefficient between adjacent chocolate and almond product layers is evaluated.
