Abstract
► RGB and Hyper potential to discriminate apple maturity in shelf-life was compared. ► Hyperspectral Imaging showed more potential than RGB imaging. ► Color evolution during shelf-life under different storage regimes was modeled. ► First order kinetic model showed the best fit to color apple evolution.
