Abstract
⺠RGB and Hyper potential to discriminate apple maturity in shelf-life was compared. ⺠Hyperspectral Imaging showed more potential than RGB imaging. ⺠Color evolution during shelf-life under different storage regimes was modeled. ⺠First order kinetic model showed the best fit to color apple evolution.
