► Authentication and labeling of Italian Asiago d'allevo cheese is of great economical importance. ► Traditional approaches require expensive and time consuming chemical analysis. ► NIR spectroscopy is shown to be effective in the estimation of several key quality attributes. ► The VIP index highlights the most relevant spectral regions.
