Abstract
⺠Authentication and labeling of Italian Asiago d'allevo cheese is of great economical importance. ⺠Traditional approaches require expensive and time consuming chemical analysis. ⺠NIR spectroscopy is shown to be effective in the estimation of several key quality attributes. ⺠The VIP index highlights the most relevant spectral regions.
