Abstract
⺠Moderate electric fields (MEF) accelerate diffusion of salt into vegetable tissue. ⺠MEF and temperature in combination cause greatly increased salt diffusion. ⺠Microstructural changes occur in vegetables in response to MEF and heat. ⺠Results show that marination processes may be accelerated by MEF.
