Abstract
► Moderate electric fields (MEF) accelerate diffusion of salt into vegetable tissue. ► MEF and temperature in combination cause greatly increased salt diffusion. ► Microstructural changes occur in vegetables in response to MEF and heat. ► Results show that marination processes may be accelerated by MEF.
