Abstract
⺠Drying on inert carriers is suitable for pea starch dispersions. ⺠Teflon beads as inert carrier outperform Teflon cubes. ⺠Correlation that predicts the final moisture content of dried product is provided. ⺠Damage index of pea starch increases significantly above drying air temperature of 180 °C. ⺠Coefficient of apparent diffusion of pea starch ranges from 4 Ã 10â11 to 3 Ã 10â8 m2/s.
