Abstract
► Drying on inert carriers is suitable for pea starch dispersions. ► Teflon beads as inert carrier outperform Teflon cubes. ► Correlation that predicts the final moisture content of dried product is provided. ► Damage index of pea starch increases significantly above drying air temperature of 180 °C. ► Coefficient of apparent diffusion of pea starch ranges from 4 × 10−11 to 3 × 10−8 m2/s.
