Abstract
⺠A food-grade acidic chemical for reduction of Clostridium sporogenes spores was tested. ⺠The chemical was made of fatty acids and lactate esters. ⺠A 10% concentration of the chemical killed all spores after 60 min exposure at 75 °C.
