Abstract
⺠A process for PUFA-enriched glycerides starting from high-acid crude fish oil was developed. ⺠The acid value of the crude fish oil was successfully reduced by lipase-catalyzed esterification. ⺠The production contained 74.6% of DHA, which was 2.71 times more than that in the original fish oil. ⺠The process of PUFA-enriched glycerides was evaluated to be successful in large scale application.
