Abstract
► Potentiometric electrodes seem useful to classify honey by its botanical origin. ► Potentiometric electrodes do not discriminate honey according to thermal treatments. ► A remarkable correlation between electronic tongue and physicochemical parameters was found. ► The correlation between electronic tongue and volatile compounds was weak.
