Abstract
⺠Potentiometric electrodes seem useful to classify honey by its botanical origin. ⺠Potentiometric electrodes do not discriminate honey according to thermal treatments. ⺠A remarkable correlation between electronic tongue and physicochemical parameters was found. ⺠The correlation between electronic tongue and volatile compounds was weak.
