Abstract
► We examine viability of spray-dried LGG in protein-carbohydrate matrices during storage at 25 °C. ► Glucose inclusion in protein-carbohydrate encapsulant matrices improves LGG viability. ► Both a glassy state and glucose in the encapsulant matrix are required for optimal LGG survival.
