Abstract
⺠For first time UHPH processing has been coupled with aseptic packaging. ⺠UHPH apple juice is commercially sterile with no microbial growth for 2 months at 30 °C. ⺠Degradation reaction constant and activation energy were calculated. ⺠Polyphenol, vitamin C and color changes were modeled for storage conditions.
