Abstract
► Extraction kinetics of anthocyanins from calyces of Hibiscus sabdariffa. ► Solid to solvent ratio, particle size, temperature affected the extraction yield. ► A simple diffusion model integrating the thermo-degradation was validated. ► Interesting results were obtained with a ratio of 1/5 with crushed calyces at 25 °C.
