Abstract
⺠Shelf life prediction of vacuum dried coconut milk powder at 90% RH and 38 °C. ⺠Aluminium foil laminated polyethylene as packaging material. ⺠We model kinetics of moisture transfer and oxidative rancidity of the packed powder. ⺠Shelf life of 30 days to attain critical moisture content of 11.2% db. ⺠Predicted peroxide value after 30 days was 6.291 mEq. of O2 per kg fat.
