Abstract
⺠Folic acid fortification in rice parboiling is described by multifactorial model. ⺠Optimal soaking time is about 2 h. ⺠Folate retention rate during milling follows a 1st order kinetics. ⺠Folate uptake rate during parboiling exhibits time-dependent rate.
