Abstract
⺠The study presents a novel technique to control the ice cream freezing process. ⺠The presented technique is based on the monitoring of product electrical characteristics. ⺠The proposed method has been compared with standard control techniques. ⺠The presented technique overcomes some drawbacks of the standard methods. ⺠Measured electrical parameters present good correlation with data from standard control techniques.
