Abstract
► Isomaltulose is a natural sucrose substitute. ► Sucrose isomerase (SIase) was displayed on yeast cell surface. ► The displayed SIase was stable at a broad range of temperatures (35-55 °C) and pHs. ► The displayed SIase can convert sucrose to isomaltulose.
