Abstract
⺠Isomaltulose is a natural sucrose substitute. ⺠Sucrose isomerase (SIase) was displayed on yeast cell surface. ⺠The displayed SIase was stable at a broad range of temperatures (35-55 °C) and pHs. ⺠The displayed SIase can convert sucrose to isomaltulose.
