Abstract
► An assemblage of Late Neolithic artefacts at the central post of a long house was identified as a structured deposition. ► Phytolith morphometrics, cell wall pattern analyses and starch evidence suggest the predominance of Triticum sp. ► Observations of the inner foo structure and amino acid data support the presence of fermentation processes.
