Abstract
⺠The γ3 hordein, a barley prolamin, is glycosylated at an atypical Asn-Leu-Cys site. ⺠Glycosylated hordein molecules are targeted through the Golgi apparatus. ⺠Native γ3 hordein disulfide bridge folding is similar to that of wheat γ46-gliadin. ⺠γ3 hordein binds IgE from wheat-allergic patients mainly after reduction-alkylation. ⺠γ3 hordein glycosylation is not involved in IgE binding and even decreases it.
