Abstract
⺠J. curcas protein hydrolysates were produced with commercial and gastrointestinal enzymes. ⺠Extensive hydrolysates exhibit angiotensin I-converting enzyme, antioxidant and antithrombotic activities. ⺠J. curcas hydrolysates can be considered useful food additives or nutraceutical ingredients.
