Abstract
⺠Purification protocol of lipid transfer proteins from wine and grapes. ⺠Vinification does not cause notable structural changes of lipid transfer protein. ⺠Resistance of lipid transfer protein to acidic and alcoholic environment of wine. ⺠LTP may not lose the allergenic potential as experienced for grape LTP.
