Abstract
► The binding sites of retinol and retinoic acid with α-and β-caseins were located. ► Retinoid interaction is mainly hydrophobic via participation of several amino acids. ► Retinol and retinoic acid do not share similar binding sites with α- and β-caseins. ► Stronger retinol-protein interaction was observed than those of retinoic acid complexes. ► Retinoid complexation alters casein conformation leading to a partial protein structural destabilisation.
