Abstract
► Quercetin and triterpene rich Apple peel extracts inhibited in vitro LDL oxidation. ► Quercetin rich apple extract was effective at physiological conditions and levels. ► In vivo quercetin metabolites inhibited LDL oxidation at physiological levels. ► Quercetin rich apple extract can exert in vivo LDL oxidation inhibition effects. ► Ursolic acid was responsible for triterpene rich apple extract's effectiveness.
