Abstract
⺠Quercetin and triterpene rich Apple peel extracts inhibited in vitro LDL oxidation. ⺠Quercetin rich apple extract was effective at physiological conditions and levels. ⺠In vivo quercetin metabolites inhibited LDL oxidation at physiological levels. ⺠Quercetin rich apple extract can exert in vivo LDL oxidation inhibition effects. ⺠Ursolic acid was responsible for triterpene rich apple extract's effectiveness.
