Abstract
⺠Carbonyl formation depends on oxidants, especially iron. ⺠A synergistic effect of oxidants and heat increases protein oxidation. ⺠Oxidants weakly affect conformational changes of proteins. ⺠Conformational changes of proteins are rapid and mainly temperature-dependent.
