Abstract
⺠Thermomyces lanuginosus lipase hydrolyses EPA faster than DHA and STA. ⺠DHA is not significantly protected from hydrolysis by being more abundant at sn-2. ⺠T. lanuginosus lipase is fatty acid and not regioselective for fish oil. ⺠T. lanuginosus lipase can be used to separate EPA and DHA.
