Abstract
► New voltammetric method for determination of total redox status of edible oils is developed. ► Method relies on the EC' mechanism of the ABTS assay when reacting with Trolox/Oil's antioxidants. ► The total antioxidant capacity of commercial edible cold-pressed edible oils has been determined. ► UV-VIS experiments were used to confirm the relevance of the new voltammetric method. ► The scavenging effects of the oils to superoxide radicals produced by macrophages are shown by EPR.
