Abstract
⺠BAs are considered as indicators of food quality and freshness. ⺠BAs indicate the degree of food fermentation or degradation. ⺠Most BA analyses are carried out by HPLC. ⺠LC methods are feasible (accurate, precise, robust) for BA analysis in foods.
