Abstract
► Fourteen ginsenosides in sulphur-fumigated and non-fumigated ginseng were determined. ► Ginsenosides were lower in sulphur-fumigated than in non-fumigated ginseng. ► Rh2 and Rg5 were only detected in decoctions of sulphur-fumigated ginseng. ► sulphur-fumigation affects the quality of ginseng as well as its decoction.
