Abstract
► Surimi wastewater was valorised as fish protein hydrolysate by Devolase. ► Fish protein hydrolysate from surimi wastewater could be used as an alternative nitrogen source for microbial cultivation. ► Providencia sp. C1112, a newly transglutaminase-producing isolate, provided high MTGase activity in the FPH medium.
